Chole masala is usually served with bhature (a deep-fried bread made with a fermented dough), or with rice, parantha or kulcha. The key ingredient in chole masala is the chickpea! Like many Indian dishes, this masala is rich in flavour - which means it’s rich in spices!

The main ingredients of Chole masala recipe are- Onion (Red/white as per availability), tomatoes, garlic, ginger and chole masala powder.

An Indian staple, this meal can be served at various times, depending on the occasion. While it’s common to eat it during breakfast or brunch meal, many people also enjoy it as a snack. Chole masala is a must-try curry during any ceremony or special occasion.

So, there are myriad recipes available on the web for this delectable and savoury Chole Masala. Even though the base ingredients remain the same, every family has its traditional way of cooking it.

Making a mouth-watering chole masala depends upon how perfectly the onion and tomato masala is cooked and the quality of spices used. Valley Spice chhole masala powder is made using 15 spices. These are not only pure and authentic but also add just the right amount of flavour and aroma that otherwise may seem daunting!

Let’s start with the step-by-step Chole Masala Recipe:


  • 1 cup chickpeas (if using dry, soak them overnight, or you may use canned chickpeas for instant preparation)

  • 1/2 cup red onion coarsely chopped

  • 2 cloves garlic

  • 1/2-inch ginger

  • 1/2 cup tomato puree or grated fresh tomatoes

  • 2 tbsp coriander powder

  • 1/2 tsp turmeric powder (optional)

  • 2 green chillies (as per taste)

  • 1 tbsp Valley Spice Chhole masala powder

  • 2 tbsp oil

  • Salt to taste

Preparation Method:

  • Wash and soak chickpeas in water (properly dip) overnight, or for at least 8 hours.

  • Then cook them in a pressure cooker with water four times the quantity of dry chickpeas and 1/2 a tsp of salt.

  • If you are using canned chickpeas, drain off all the extra liquid and rinse them thoroughly in cold water before using.

  • Heat the oil in a thick bottom pan.

  • Blend your onion, garlic and ginger in a blender to make a thick paste and put it in the pan. Add salt.

  • Turn the heat to medium-low. Fry the mixture till it starts changing colour and turns lightly golden.

  • Then add turmeric (if using) and coriander powder.

  • Stir for a couple of minutes and then add the fresh tomato puree or canned tomato puree.

  • Stir it for another 5-7 minutes on medium heat

  • Mix it all with the boiled chickpeas and add a tablespoon of Valley Spice chhole masala.

  • That’s it! Your chole masala is ready.

  • Garnish it with coriander or cilantro leaves.

  • Serve hot with poori, bhatura, kulcha, parantha or rice.
