Mushroom Toast: Mother’s Day Breakfast Special

A yummy dish, you can whip it up in no time at all.

All you need are some finely chopped mushrooms and onions (you can use dehydrated onions as well to save time and hassle of peeling and chopping onions).  Also, some herbs and spices, a little olive oil, and you are all set.

Put oil in a pan, add onions and sauté well. Now add chopped mushrooms and cook on high flame as the mushrooms have high water content and cooking over high flame helps to evaporate that fast.

Once dry, add salt and some garlic powder and cook for a while, till the mushrooms are well cooked. Now add some black pepper powder, oregano and parsley and mix well and turn off the heat.

Spread this mix on a lightly buttered toast. Sprinkle some grated cheese over the toast and bake in the oven at 180 degrees for 2-3 minutes.

Arrange a plate of these hot and sizzling mushroom toasts, together with a cup of hot/cold coffee or the refreshing watermelon mojito, and a stem of her favourite flower for the added panache.

Mango Mousse: A special dessert for the special lady

Recipe

A fuss-free and easy dessert to make, all you need is cream, sugar, gelatine mango pulp and some mango chunks.

Keep half a kilogram cream in the freezer for 10-15 minutes, till chilled. In the meanwhile, puree 3-4 fresh mangoes or take a cup and half of frozen mango puree and keep in the refrigerator.

Soak a couple of strips 2-3 of gelatine or ¾ teaspoon (if using in powdered form) in 3-4 tablespoons of warm water. Mix well so that the gelatine dissolves completely.

Take 1/2 cup of the chilled cream, whip it and add the gelatine. Mix well and keep in the refrigerator for 15 minutes.

Put sugar as per taste in the rest of the chilled cream and whip gently till nice and fluffy. Add the cream-gelatine mixture and mix gently. Now add the mango puree and mix gently clockwise, ensuring there are no bubbles.

Spoon some mango chunks in chilled glasses or bowls. Pour the cream-mango mix, top with a few mango pieces and keep in the fridge for 6-8 hours to allow setting.

Once set, serve chilled. You can also add a drizzle of strawberry pulp on top for that added delightful twist of strawberry.

A lip-smacking dessert, the mango mousse is guaranteed to make your mom drool!

 

Watermelon Mojito: Mother’s Day Special Drink


 

Recipe

An extremely quick-to-make and delicious summer drink, this one never fails to delight.

Peel half a medium-sized watermelon. Deseed a dash of black pepper powder for the kick and a pinch of rock salt. Peel and cut into big chunks. Put in a mixer with some lemon juice, and blend till smooth.

Pour into a decanter and add some washed and pounded mint leaves. Chill for half an hour. Pour into tall glasses.

Garnish with lemon wedges, mint sprigs and a watermelon spear and present proudly to your mom while she chills out on the patio.

A refreshing summer cooler and a good looking one at that, this will surely win you accolades from your mom!

 

Win her over with Chatpati Papri Chaat

 

Recipe

Easy-peasy, all you need is some thick curd, spices, boiled potatoes and chickpeas, tamarind chutney and some papri. (Store-bought is equally good)

Assemble papri on a flat serving dish. Scatter some boiled potatoes and chickpeas on it. Whisk the chilled curd with salt, a little sugar, cumin powder, green chilli powder and black pepper powder.

Now pour this over the papri-potato-chickpeas. Take a tablespoon of tamarind chutney and drizzle over the chaat.

Sprinkle some cumin powder and red chilli powder and garnish with pomegranate seeds and serve chilled to your beloved mom.

Crispy, savoury, sweet and tangy, this one is an ever-favourite and will win you brownie points!
